Jo Plumbley is the owner and founder of this deliciously stylish bar and taproom in the Enterprise Centre in Eastbourne.
“Andy and I thrive off stress and pressure. We don’t like twiddling our thumbs and lockdown was a good time to take stock and plan our next project.” Andy and Jo run the very popular Crown Pub in Old Town, Eastbourne. “Ninkaci was born out of my love of good wine, style, hospitality and the smell of cigars. Adding fine whisky and craft beer rounded off the idea to bring a new stylish venue for Eastbourne.
“We couldn’t predict how people would behave after lockdown, and what the ‘going out’ culture would be. We played it a bit safe at first, dipping our toe in the water to see if Eastbourne wanted a new bar like Ninkaci.” They certainly did. Jo quickly started looking out for bigger premises.
“Working with great people is my recipe for a happy, successful business. I’II always choose someone who is good with people. You can train someone to pour a pint, but not how to get along with everyone.” Local spirits “In our new premises, still at the Enterprise centre, we have expanded our range of wines, we now have ten craft beers on tap, we’ve added to the whiskeys. We have a gin from Rathfinnys that comes from the third pressing of the grape, the rebeche, to create a superior quality London Dry Gin.” Wine enthusiasts, will be thrilled with the selection, and the prices. The Waddling Duck is a firm favourite with regulars, and the Rathfinny Classic Cuvee is an award winning English sparkling wine, regularly beating top champagnes in tastings. In addition to the extensive international whiskey menu that runs to two pages, they stock local rum, and various handpicked spirits and liqueurs.
If Cigars are your thing, you can try Winston Churchill’s, Romeo and Juliet, as well as the world’s most popular, Montecristo. To be enjoyed at home, or at the outside tables. Cool music They have a regular DJ, Fergus who plays cool classic house, soul and funk. He adds to the laid back vibe that we all need when we finish work. For private parties or meetings, there’s the whisky lounge available to hire.

Jo is passionate about combatting period poverty, and hopes providing free sanitary products will become the norm. The loos, like the rest of the bar exude style. I’d say Eastbourne is definitely ready for this. After 5pm, you can use the speakeasy door at the rear of the Enterprise Centre.
