It’s chic and informal, and Hardy, the owner, speaks passionately about the ingredients they source with their talented and passionate chefs; Matthew Coates and Ross Davey.
The food is the star. They spend more time sourcing their food than a lot of Michelin starred restaurants.
Hardy and his chefs travel up to the iconic and historic Smithfield Market to choose the very best grass fed, organic scotch beef for their steaks and short ribs. They also source local Sussex cattle and salt marsh lamb for other menu items.
Gordon Ramsey and Tom Kerridge use the same supplier.

Dry aging

A few years ago, they invested in a state of the art, dry ageing fridge, especially designed for maturing beef.
It meant they could control the time, temperature and humidity themselves. They age their sirloin for at least 50 days, the fillet for around 35 days and also serve a juicy tomahawk sharing steak here too.
If you are struggling to find really fresh seafood in Eastbourne, Cru speak to four fishermen every morning to find out what’s available that day. Whilst they will always have locally and sustainably caught fish on their menu, they have specials like monkfish tails, octopus, cuttlefish and razor clams when available.
The tails and octopus go especially well cooked on charcoal on their Japanese konro Barbecue, which is perfect for fish.

Wine expert

Wine is a big deal at Cru. Hardy won the prestigious ‘Hakkasan award’ for student of the year whilst studying for his degree in wine at Plumpton and his partner, Jordan also holds wine qualifications.
“We’re continually tasting to source the very best wines to bring down to Eastbourne and offer them at a very reasonable price. The concept of Cru is all about serving the best produce we can get our hands on and serving it in a relaxed, fun and informal venue. There aren’t many other places I can think of that you can enjoy dry-aged steaks and a bottle of fine wine whilst David Bowie or the Cure are playing in the background! .’’
It’s a relaxed venue for drinks and nibbles but equally suitable for a celebratory dinner.
