Breakfast and lunch are served every day with dinner exclusively on Thursday, Friday and Saturday evenings. Specialty coffee is supplied by West Sussex-based Cast Iron Roasters, and you can enjoy fresh fruit juices and smoothies along with loose leaf teas. Daytime delights include full English breakfasts, Morroccan shakshuka and buttermilk pancakes through to wild mushrooms on sourdough toast, Sussex beef burgers and fresh fish delivered daily from the local fishmonger.
In the evening Skylark transforms into an elegant candlelit restaurant, where diners choose from a concise a la carte menu that boasts a selection of seasonal dishes showcasing the chefs’ talents. In summer the kitchen makes the most of its proximity to the coast serving fresh Eastbourne-landed mackerel and in winter months you will find local wild venison fillet and root vegetable and gruyere gratin. Skilled bartenders produce hand-crafted cocktails as well as serving beers from many local breweries, and the varied wine list includes award-winning Sussex wines sourced from some of our county’s finest vineyards.
Skylark was a finalist at the Sussex Food & Drink Awards for ‘Newcomer of the Year’ in two consecutive years, 2019 and 2020, and won ‘Place to Eat/Drink’ at the Eastbourne Excellence in Business Awards in 2020. Impressively, it has proudly maintained it’s spot amongst the top 10 restaurants in Eastbourne on TripAdvisor, after reaching number 1 before their first birthday.
